I had a good bite out of mine, put some walnuts and raisins in it and that just makes it taste even better. I know it's not fair of me to show you all this yummy tasting stuff, so..... I'll let you give it your own try and write the recipe down for you! Isn't that nice???
4 eggs, 2 cups sugar, 1 cup vegetable oil, 1 can (16 ounces) pumpkin, 2 cups all purpose flour, 2 teaspoons ground cinemon, 1 tsp baking soda, 1/2 tsp salt, 1/2 tsp ground ginger, 1/4 tsp ground cloves, 1 cup raisins and if you like, 1/2 cup chopped walnuts.
Heat oven to 350 F. grease jelly roll pan (15,5 x 10,5 x 1 inch), beat eggs, sugar, oil and pumpkin. Stir in flour, baking powder, cinnamon, baking soda, salt, ginger and cloves. Mix in raisins (and walnuts). Pour batter into pan. Bake 25-30 min. or until golden brown ( I did mine 40 min.) and let cool. Cut into 2 x 1,5 inch bars, and if there are any remaining, refrigirate them!
