Blueberry Oatmeal Streusel Bars







Besides scrapbooking I've got another addiction and that's baking. I really like to try out stuff, and last week I got a magazine in the mail, which had a couple of recepies in it called" It's hip to be square". Well, as you can see, I started one today, cause Henk said these are so, so very good! And we all like good things don't we?
This is the crust.. looks like nothing, but ...... wait till you see the rest.......







After you first bake the crust, you open a can of Blueberry Pie filling, add some lemon zest and spread it over the crust, and then it looks like this.
















Then it's time to prepare the topping which has cinnamon in it, and oh boy, I wish you could smell it, it sure smells great in my kitchen now! There's also brown suger, rolled oats, flour and magerine in it... sounds weird, oats in a cake, but it gives it a crispy bite! Can't wait till it's done and cooled of, cause I sure like to try a piece.



If you get kind of hungry after reading this, here's the recepie;

Crust

3/4 cup margarine (175 ml)
1/2 cup brown sugar (125 ml)
2 cups all-purpose flour (500 ml)

Filling

19 oz can blueberry pie filling (540 ml)
1 tbsp lemon zest (15 ml)

Topping

1/2 cup margarine (125 ml)
3/4 cup brown sugar (175 ml)
1/2 cup all-purpose flour (125 ml)
1 1/2 cup rolled oats (375 ml)
1/2 tsp cinnamon (2 ml)


Preheat the oven to 180 C To prepare the crust, cream together the margarine and brown sugar, then slowly mix in the flour. Press the dough into a 13x8 inch (33x20 cm) greased baking pan, patting the dough evenly across the bottem and up the sides. Bake the crust for 15 minutes. Let cool. In a medium bowl, mix together the pie filling and lemon zest. For the streusel topping, cream together the margarine and brown sugar. Slowly add flour, oats and cinnamon until the mixture is unifom with a crumbly consistency. Spread the blueberry mixture over the baked crust. Sprinkle with the streusel mixture and bake for 30 minutes or until the top is crunchy and golden. Allow to cool for 15 minutes. Makes 36 bars.


And now it's done!!!! Smells so very good, and I really have to try a piece NOW!
